Instructions to make to make Curd rice

  1. Half cup of rice boiled nicely and mashed slightly
    (do not use Basmati Rice/ Delhi Rice for it would not be suitable for South Indian Yoghurt or Curd Rice, instead use Sona Masuri or any such Rice)
  2. Now add 1 cup of thick Yogurt/ Curd and mix it with the mashed up Rice nicely. If needed you can add some water.
  3. Add Salt to taste.Heat a small pan with oil, once hot, add the Mustard seeds and let them Crackle.
  4. Then add all the other ingredients for the tempering, saute for a second and pour the tempering on the prepared Yogurt / Curd Rice, and garnish it with coriander leaves and pomegranate.
  5. Enjoy this deliciously cool dish to beat the hot summer. Goes well in summer or winter. Serve curd Rice with some nice tangy pickle.
