- To marinate chicken
- 1 kg Chicken pieces (clean and wash well)
- 1 tsp Red Chili powder
- 1/2 tsp Turmeric powder

- 1/2 cup Yogurt
- 1/2 cup Fried Onions

- 7 cup Water
- 1 Bay leaf
- 1 Lemon
- To Make Biryani
- 4 tbsp Oil
- 2 tbsp crushed fried Onions
- 1 tbsp Biryani masala
- 1 Bay leaf
- 2 Cardamom
- 1 Cinnamon
- 1 tbsp chopped Coriander
- 3-4 Saffron strands soaked in milk
- 1 pinch saffron food color
- 1 tbsp fried Raisins
- 1 tsp Kewda water
Instructions to make to make Hydrabadi Chicken Biryani
- Add all marination ingredients in the chicken and marinate in refrigerator for at least 1 to 2 hours.



- For chicken, Heat oil in a wok and put whole spices.


- Add marinated chicken and cook on low heat for 10 minutes.


- Add biryani masala and 1/2 tsp salt, mix well and cook again for 5 minutes.


- For rice, heat 1 tsp ghee in a pan and put whole masalas.

- Add washed rice, salt, lemon pieces and cook rice till 75% done.



- For biryani, put half of cooked chicken in a pot and add half of coooked rice.


- Add remaining chicken with gravy and sprinkle half of fried onions, coriander leaves, saffron milk and kewda.



- Put remaining rice over it, topped with fried onions, coriander leaves, fried raisins, saffron milk and kewda.



- Cover tightly the pot, put it on iron tawa and give dum for 10 minutes on low flame.

- Biryani is ready to serve, enjoy it with raita and salad.
