  23. 1 tbsp Oil/ butter per serving
  24. 1 cup sev

Instructions to make to make Surti locho

  1. Soak Chana dal & urad dal together with rice for atleast 5-6 hrs.
  2. Drain the dal & blend them with the yogurt. Blend until you have a semi-smooth mixture similar to thick cake batter consistency and no whole lentils.
  3. Mix in the salt & sugar and keep it covered for fermentation for 8+ hrs or overnight.
  4. Add green chili, ginger paste and oil to it. Mix it together.
  5. Put the steamer on and greaze a 8- inch cake tin. Also keep the Locho masala ready.
  6. Once everything is ready, add Eno to the batter and whish till completely mixed.
  7. Pour the batter in the cake tin, about 1 inch thick and sprinkle with Locho masala on top. Keep for steaming for 12-15 mins.
  8. It's cooked if knife comes out clean..Serve the locho immediately when it's done and piping hot! Top with sev, drizzle of vegetable oil, add more of Locho masala if needes, and a few quick pickled onions. Enjoy!
